情人節巧克力禮盒系列。Let’s make your 2010 Valentine’s Day SWEETER!!

為了這次的情人節巧克力禮盒,我特別一口氣買了8種巧克力,花了將近2個禮拜的時間來試驗和搭配口味,去了 JB PrinceNY Cake & Baking Distributor 好幾次,至於糖果盒也是很講究,特別挑選了這個咖啡色盒子,最後,還自己親手剪一個心型的小卡片,要給大家寫一些甜言蜜語,希望帶給大家一個美好浪漫的情人節。

巧克力禮盒-$30
15個純手工巧克力,6種口味,每一種口味一定會有2或3個。





Classic Dark Chocolate Truffles, cover with cocoa powder
70%苦甜巧克力,口感濃醇,巧克力在嘴裡很久才會慢慢融化,需要細細品嚐。
Using Valrhona Guanaja 70% bittersweet chocolate to make a rich, but slightly bitter ganache (甘拿許),hand shaped and dip in tempered chocolate then rolled into Valrhona cocoa powder




Rose Ganache Square with Rose Petal浪漫玫瑰。
哪有情人節沒有玫瑰香呢?也許玫瑰花不是用來看的,而是用來含在嘴裡的。這個內餡是很軟、幾乎是液態狀的,馬上就會在你的嘴裡融化開來。玫瑰花的香味會在最後才出現,會有驚喜感。有機的乾燥玫瑰花瓣讓香味更完整。
Using silky Balcolade 56% semisweet chocolate and heavy cream to accompany delicate rose flavor with a hit of sweetness.




Espresso Kahlua ganache, garnish with ground espresso bean
濃縮咖啡加卡魯哇咖啡酒做成的甘拿許,吃在嘴裡,濃濃的咖啡香、酒香馬上散開來,外上的磨碎巧克力豆增加脆脆的口感。
Adding espresso to E. Quittard 72% bittersweet chocolate to make ganache and a splash of Kahlua coffee liquor.




Maker’s Mark Whiskey Ganache, garnish with gold leaves
誰說巧克力是給女生吃的呢?
威士忌和巧克力,還加金箔( because my man is precious!! 嗯,好像有一點太肉麻了。。。),不過只能說這個是 “ 有男人味的巧克力 “ ,我想男生一定比較愛這個口味吧,很 man 的感覺。
Using Balcolade 72% bittersweet chocolate and famous Maker’s Mark Whiskey to make this soft ganache, cover with a very thin layer of bittersweet chocolate, soft and crunchy and velvety at the same time..



Peanut Butter ganache, cover with hand chopped roasted, salty peanuts
牛奶巧克力花生,大人小孩都喜歡的口味。
Using Callebaut milk chocolate and smooth peanut butter to make this sweet and creamy filling, hand shaped and dipped in Balcolade 56% semisweet chocolate and rolled in peanuts (我堅持用手切細花生,因為和機器打碎的口感不一樣)



Fleur De Sel Caramel Square dipped in bittersweet chocolate
有一點咬勁但是不黏牙的鹽花焦糖,切成一英吋小塊之後,再用72%的巧克力包裹起來,灑上一點點的 Fleur De Sel,軟、硬、甜、鹹,還有咬勁和鹽花的脆,包準你一個一定不夠!




無敵巧克力布朗尼禮盒 $15
8塊心型2吋 "小兩口" 布朗尼



這個布朗尼一定要好好說一下,它是用3種巧克力做的,99%無糖巧克力+微甜巧克力+苦甜巧克力。在做好麵糊要進烤箱之前,還加入一些巧克力碎片,所以,口感上除了濃、純、 pure chocolate 之外,偶爾還會吃到小小塊、脆脆的 chocolate chip。我想叫它無敵巧克利布朗尼,一點都不為過。
Super moist and rich brownie, 2-bites size ( about 2 inches ), perfect for you and your sweet hearts!! Using Scharffen Berger 99% unsweetened chocolate, + E. Quittard 61% bittersweet chocolate and 72% bittersweet chocolate to make this ultra rich, very satisfying brownie.
